
Below is a long, long list of all the core ingredients and products we use in our shops' kitchens.
The Trade Descriptions Act requires the definition of country of origin to change depending on where the ingredients are finally cooked (or squeezed or bottled). To keep things simple, we've included an explanation of the wheres, whys and hows of the ingredients and products that we buy.
Our food philosophy is about securing the best ingredients we can - this will of course depend on the seasons. During the summer we can grow our rocket leaves in Sussex, but in the winter they come from Italy.

(USA): Shipped to us at room temperature, roasted in our shops throughout the day
APPLE JUICE
(UK): UK apples, pressed and packed for us in the UK for our pure apple juice
APPLES
(Mostly UK): Picked from UK orchards during the apple season (from Chile and New Zealand at other times of the year), delivered to us every day
ARTISAN BAGUETTE
(France): Stone-baked, made from a traditional sour dough recipe, snap frozen, shipped to us and baked in our shops
AVOCADO
(South America, South Africa, Dominican Republic, Israel & Spain): Hand-turned regularly in our special ripening room, shipped at room temperature, sliced in our kitchens every morning. Never air-frieghted
BACON
(UK): 100% Farm Assured, no phosphates, slow-cured and beech-smoked. Snap frozen for slicing, cooked in the UK until double-crispy and then delivered to us every morning
BANANAS
(Colombia & Panama (elsewhere when required)): Harvested and brought to us by boat and Fairtrade
BASIL
(Hungary, Israel & Spain): Picked fresh and air-freighted to us. This is the only ingredient we air-freight
BEEF
(UK): Shipped from Southern Ireland, cooked in the UK and delivered chilled to our shops every morning
BLOOMER BREAD
(UK): Made with UK flour, stuffed full of poppy seeds, sunflower seeds, linseed, oats, bran and wheat flake, delivered to us every morning
BRIE
(France): Traditional creamy French Brie, sliced to our own specification and shipped to us chilled
BUTTER
(France): Traditional French butter, shipped to us chilled
CAESAR MAYO
(UK): Made to our own recipe using free-range eggs in Buckinghamshire
CAKES, BARS AND BISCUITS
(UK): Handmade to our own recipes, delivered to us chilled

(UK ): Sourced in the UK except when out of season. Pressed and packed in the UK, never pasteurised

(Greece): A traditional feta cheese, using both sheep and goats’ milk, prepared for us in Greece, chilled and then shipped to the UK

(UK): No stabilisers, no preservatives, handfuls of fresh herbs, made for us in New Covent Garden Market to our own recipe, delivered to us chilled
FRUIT COMPOTE
(UK): Fruit sourced from various countries (depending on seasonality and variety). Compote prepared for us in the UK

FRUITY CHUTNEY
(UK): Apricots, apples, sultanas, curry powder, cayenne pepper, turmeric and onions are simmered together for over 3 hours to make this chutney
